Remove the stones from the dates. Cut the fruit into small dice. Boil the water with the sugar for a few minutes until it dissolves. Add the anise and orange zest, and mix in a bowl with the chopped fruit and raisins. Leave to macerate for an hour. Break the cheese into small pieces. Shell the pistachios.

Assembly: Drain the fruit and set aside the liquid. Make a bed of crumbled cheese and place a spoonful of fruit on top. Finish by sprinkling on pistachio grated with a microplane grater. Serve with a shot glass of maceration juice.

Notes: If you do not have a microplane grater, chop the pistachios with a knife.

Tip: Substitute the anise with apple juice to make this snack suitable for children.
