Sauté the onion in a pan with a little oil until caramelised* and set aside. Crumble the cheese. Boil the chopped potato and then mash. Mix the mashed potato, crumbled cheese and onion in a bowl.
Assembly: Place a spoonful of filling in the middle of each pastry circle, brush the edge with water and close making sure no air remains inside. Cook in the oven at 250ºC until golden brown (about 5-7 minutes).
Notes: They can also be fried.
Tip: You can substitute the 20 g of spring onions with 10 g of shop-bought fried onions.
*Julienne: Cut into thin strips.
*Caramelised: Cook with a little oil or butter until the sugar from the onion caramelises.
