Method
Preheat the oven to 180ºC.
Cut the wholemeal bread into 2 cm dice without the crust and mix with the olive oil in a bowl.
Thread a piece onto each skewer, leaving the end of the skewer free to add the rest of the ingredients later.
Toast the bread in the oven for 10 minutes.
Cut the dried apricots in half and the cheese into dice.
Thread pieces of apricot and cheese onto each skewer.
Notes
When threading the cheese, make sure it is done gently to avoid breaking it.
Tip
It can be decorated with finely grated walnut.
