Method
Cut the aubergine and onion into dice.
Cook the vegetables in a pan with olive oil and a pinch of salt over a high heat at first and then over a medium heat.
Cut the cheese more or less the same size as the vegetables.
Assembly
Thread several pieces of onion, one of aubergine and one of cheese onto each skewer.
Notes
When threading the cheese, make sure it is done gently to avoid breaking it.
Tip
To speed up the cooking process of the vegetables, you can cover the pan when cooking over a medium heat.
