Ingredients

  • 120 g Golden Delicious apple
  • 120 g fresh figs
  • 20 g fried sunflower seeds
  • 80 g Papillon Roquefort
  • Mustard and honey dressing
  • 1 teaspoon wholegrain mustard
  • 1 teaspoon honey
  • 3 teaspoons extra-virgin olive oil
  • 1 teaspoons balsamic vinegar
  • salt
  • pepper

Preparation

Peel the apple and cut into dice. Cut the figs into quarters. Crumble the cheese. For the dressing, mix the ingredients in a bowl with a whisk. Assembly Place the apple, figs, sunflower seeds and crumbled cheese in a bowl. Dress with the dressing and mix gently to avoid damaging the ingredients. Serve with a few drops of dressing around the plate. Notes For a larger amount of dressing, it can be emulsified with a blender. Tip To prevent the apple from oxidising if you want to prepare the salad in advance, cut it and blanch in boiling water with a piece of lemon for 15 seconds. Drain and cool with iced water.
