Preparation
Preheat the oven to 180ºC. Grate the cheese with a very fine grater. Using a round mould, distribute the cheese inside forming a thin layer of about 2 mm on a tray with baking paper or silicone baking mat. Insert a skewer into each circle of cheese from below. Grate the lemon zest and mix in a saucepan with the olive oil. Warm up gently and set aside. Cook the lollipops in the oven for about 10 minutes until golden brown. Brush with the lemon oil and grate the liquorice onto the lollipops with a very fine grater.
Assembly: Serve the lollipops in a glass or small bottle to keep them upright.
Notes: Liquorice concentrate can be found in health food shops.
