Baked-vegetable flatbread with Morbier

Preparation

For the baked vegetables, place them whole in a preheated oven at 200ºC for approximately 35 minutes.  Cut the Morbier cheese into half centimetre slices and each slice into 1 cm wide strips so that the ash is in the middle. Peel the vegetables while they are still warm. Cut the vegetables into strips.

Assembly

Intersperse the vegetables in parallel on the pizza dough. Lightly season them with salt. Cook the flatbread in a preheated oven at 200ºC for approximately 20 minutes. Arrange the cheese strips on the vegetables crosswise and spaced at 2 cm intervals. Cook for 2 more minutes to melt the cheese. Serve with a drizzle of olive oil on top.

You can buy the baked vegetables already cooked.

Tip

You can add some fresh basil leaves after removing the flatbread from the oven.
