FOR ORIENTAL VINAIGRETTE
Preparation
Cut the apple into small dice. Remove the cheese cloth and roughly break the cheese up into small pieces of similar size to the apple. Crush the pistachios and hazelnuts with the blade of a knife to obtain uneven pieces. For the dressing, blend the ingredients and set aside.
Assembly
Remove the stem from the kale and squeeze vigorously with your hands in a large bowl to soften it. Pour on a little dressing and make a bed with it on a plate. In the same bowl, mix the apple, cheese, raisins and nuts, and drizzle on more dressing. Place the mixture on the kale. Decorate with a little dressing around the plate.
Notes
You can substitute the extra-virgin sunflower oil with refined sunflower oil.
Tip
If you cut the apple open in advance, you can brush it with a few drops of lemon juice to prevent it from oxidising.
