Grate the Brugge Vieux. Mix the spices, salt, olive oil and soy sauce. Cut the cauliflower into approximately 2.5 cm thick slices, and save the rest of the cauliflower for another dish.
Set aside a tablespoon of the spice mixture and, with the rest, brush the cauliflower pieces or "steaks" and place on a tray with baking paper. Place in a preheated oven at 180º for 30-35 minutes, or until the cauliflower is soft. Sprinkle the grated cheese over the cauliflower "steaks" and grill for a couple of minutes.
Place the steaks on a dish and garnish with the spice sauce.
Notes
The rest of the cauliflower can be used to make a soup or mixed with the marinade and cooked with the steaks.
