Cut the Wyke Farms Cheddar into thin slices. Roughly chop the mushrooms. Cut the garlic into thin slices. Lightly sauté the mushrooms in a hot pan with a drop of oil, add the herbs, season with salt and pepper, and pour in the apple cider vinegar.
Remove from the pan and cover with extra-virgin olive oil.
To assemble the rolls, soak the rice paper sheets in hot water for a few seconds until they are soft, sprinkle some thyme leaves on the rice paper and add a slice of cheese. Place the mushrooms on the cheddar and roll up.
Notes: Instead of seasonal wild mushrooms, you can use oyster, shiitake or Portobello mushrooms. You can serve the spring rolls with a hot sauce.
