Cut up the butter. Chop the banana and mix with the cinnamon and brown sugar. Add the lime zest and juice, and mix well. Beat the eggs, mix with the milk, pinch of salt, flour, baking powder and chia seeds, stir and add half of the marinated banana.
Add the melted butter to the mixture. Mix thoroughly. Place a little butter in a heated pan and wipe off the excess with a kitchen towel. Cook the pancakes, wiping the pan with butter before each one. Serve the pancakes with the rest of the marinated banana.
Notes: You can correct the consistency by adding a little more milk or flour. Serve with maple syrup.
