Honey and mint dressing
Preparation
Cut the halloumi into slices and set aside. Cut the peppers into small cubes, the spinach into thin strips and chop the chives. Mix the ingredients for the dressing in a bowl. Mix the lentils with a little dressing, vegetables and chives.
Brown the halloumi slices on both sides in a pan with a drop of oil. Make a bed of salad on a plate and place the halloumi on top. Finish by drizzling the dressing over the cheese and around.
Notes: You can replace the lentils with any other cooked pulses (beans, chickpeas, etc.). The salad can be prepared in advance and mixed with the dressing just before serving.
