For the apricot coulis
Preparation
Soak the dried apricots in hot water until they double in size. Blend with the mandarin juice and zest until a fine texture is obtained.
Pour the coulis onto a plate, add the yoghurt and decorate with cut unsoaked apricots.
Notes: If you want to enhance the sweet flavour, you can add a teaspoon of honey or syrup to the yoghurt or coulis.
