Cut the Beemster Gouda into 8-10 g cubes. Remove the stone from the dates and cut them in half. Zest the mandarin and mix with the oil.
Roughly chop the pistachios into pieces the size of a grain of rice. Dip one side of the cheese into the oil and press onto the chopped pistachios so that they stick. Dip the opposite side into the oil and repeat the operation. Thread half a date and a piece of cheese onto each skewer.
Serve at room temperature.
Notes: Smaller "bites" can be made by cutting the dates into 4 and the cheese into 4-5 g cubes. The mandarin can be replaced by lemon or orange, or a mixture of citrus fruits.
