Crumble the cheese with your fingers and set aside. Cut the potatoes into wedges, wash and dry. Season the potatoes with salt and coat with oil. Place them on a baking tray and cook at 190ºC for about 35-40 minutes or until golden brown.
Season the steak with salt on both sides. Brown the steak in a pan with hot oil on both sides. Remove the meat, add the wine to the pan and simmer until reduced by half. Add the cream, bring to the boil and lower the heat. Add the Roquefort and stir until completely melted. Finish cooking the steak in the oven and serve with the potatoes and sauce on top.
Notes
Wash the potatoes to remove the excess starch and prevent them from sticking to the tray.
