Break the cheese into chunks with the tip of a knife. For the citrus mayonnaise, mix the mayonnaise with the rest of the ingredients. Place the carpaccio on a plate and dress with olive oil, salt and pepper. Arrange the cheese on top, make dots of citrus mayonnaise between the pieces of cheese and finish with the basil leaves and a little citrus zest. Notes When zesting the citrus fruits, make sure you avoid the bitter white pith.
