Cut the Perail cheese into slices.
Brown the shoulder ham on the griddle or in a pan with a little butter and set aside. Assemble the sandwiches with a layer of cheese and a layer of shoulder ham. Melt the rest of the butter on the griddle or in the pan and cook the sandwiches on both sides until golden brown, pressing down on the sandwich with a spatula.
Notes
The shoulder ham can be substituted with York ham.
