Cut the onion into thin strips or dice and cook in the oil until slightly caramelised and golden brown. Peel the carrot and cut into thin slices. Peel the potato and cut into small dice. Add the carrot, potato, orange zest and salt to the onion, and cover with water.
Cook until the vegetables are soft and blend until you get a fine texture. Correct for salt if necessary. Cut the Morbier into thin slices. Serve in a bowl with the cheese on top.
Notes
The carrot can be substituted with pumpkin when in season, and the potato can be substituted with sweet potato.
