Fried halloumi with tzatziki and smoked salmon

Prepare the tzatziki first, placing the yoghurt in a bowl. Grate the cucumber with skin. Add the cucumber and the remaining ingredients to the bowl with yogurt, mix well and keep in the fridge.

Cut the cheese into slices and then into triangles. Fry the cheese until brown and drain.

Make a bed of tzatziki on a plate and arrange the fried cheese on top. Make salmon flowers and intersperse them with the cheese. Finish with a splash of olive oil above and around them.

Notes

The halloumi can also be cooked in a griddle pan or on the barbecue.
