Grate or blend the Cheddar in a blender. Brush the puff pastry with olive oil and cover ¾ of its surface with York ham and cheese. Roll up tightly. Cut half centimetre slices and place them flat on a tray with baking paper. Cook at 240ºC for about 10-12 minutes until golden brown. Thread onto skewers and serve.
Notes
If you cannot get rectangular puff pastry, you can use round. In that case, you can join the shorter strips by pressing with your fingers.
