Method Remove the tentacles from the squid and save for another recipe. Cut the body of the squid into thin strips. Peel the garlic and cut into even slices.
Cut the feta cheese into dice. Fry the garlic with a little oil in a pan over a low heat until toasted. At this point, add the squid strips and sauté for one minute. Add the tomato and cook until all of the liquid has reduced. Season with salt. Away from the heat, add the cheese, mix thoroughly and serve with the basil leaves and a splash of extra-virgin olive oil.
Notes
To make it easier to cut the squid, you can roll up the body, wrap it in cling film and place in the freezer until it is slightly frozen. Remove the film and cut.
