Cut the cheese into wedges. Place the rancio wine in a saucepan with the brown sugar and cook until it has the consistency of syrup. Toast the bread and spread a layer of the fig jam on each slice, add the Camembert and finish by drizzling some syrup on top and sprinkling on the onion sprouts.
Notes
If the syrup is very thick when cooled, it can be reheated with a little more water to thin the consistency. The sprouts can also be alfalfa, broccoli, leek, etc.
