Peel the pears and cut into dice. Cut the cheese into dice. Heat the butter in a pan until hot, add the pears and sauté for a minute. Add the sweet anise, brown sugar and anise seeds; cook until the liquid reduces. Away from the heat, add the Cambozola, mix thoroughly and serve.
Notes
It can be served with a scoop of vanilla ice cream. The sweet anise can be substituted with Cointreau.
