Grate the Le Moulis. Wash the potatoes and cut into 3 mm thick slices with the peel. Boil the potato in salted water until soft, but not falling apart. Blend the fried tomato, basil, oregano and salt. Remove the rosemary leaves from the stalk and chop. Spread the sauce over the pizza dough, top with a layer of cheese, potato, a little more grated cheese and rosemary. Cook in a preheated oven at 250ºC until golden brown.
