Break the cheese into chunks with the tip of a knife. Cut the tomato into small dice. Crumble the bread, mix the crumbs with olive oil and toast in the oven at 180ºC for a few minutes until they are crispy. Prepare the tomato tartare by mixing all of the ingredients. Mix the cheese, tomato and tomato tartare. Serve with crispy crumbs on top and finish by sprinkling on chopped chives.
