Cut the Le Moulis into small dice. Cut the tomato also into small dice Chop the chives and thyme. Mix the cheese, tomato, chopped herbs, oil, lemon, salt and pepper. Cut the courgette into very thin slices and place on a dish like a carpaccio. Season the courgette with salt and spread the chopped mixture over the top. Finish by drizzling with extra-virgin olive oil.
