Cut the onion into dice. Grate the courgette. Crumble the cheese and set aside. Cook the onion in the butter over a medium heat, stirring until golden brown. Add the courgette, turn up the heat and cook until soft. Beat the eggs, add the warm vegetables and cheese and season with salt. Cook the omelette on a high heat for a few seconds and then reduce to the minimum. Turn over the omelette and finish cooking over a low heat.
