Cut the cheese into slices. Wash and cut the potatoes into wedges, and mix them with olive oil and salt. Place the potatoes on a roasting tray with one of the flat sides facing downwards, and roast at 180ºC until golden brown (about 35-40 minutes). Cut the bacon into thin strips lengthways. Cook the bacon over a high heat to lightly brown it. Cook the eggs in a pan. Make a bed of potatoes and place the cheese slices, broken eggs and bacon strips on top. Tip Wash the potatoes after cutting and drain well to prevent them from getting stuck on the tray while roasting.
