For the salad, cut the apricots into small dice, chop the mint and mix in the olive oil. For the olive paste, mix the olives with the chopped basil. For the nachos, peel the tomato, remove the seeds and cut into small dice.
Mix with chopped coriander and oil. When assembling, place this salad on the nachos. Cut the bread into thin slices.
