Mix the chia and carrot juice and leave to stand for 25 minutes until the chia has swelled up. Cut the cheese into triangles and set aside at room temperature. Peel the carrot and cut into slices. Boil until tender. Strain and blend the carrot, tahini, olive oil, lemon juice, spices and salt.
Assembly: Place dots of hummus on a plate with a piece of cheese on each one. Finish by sprinkling the chia between the dots of hummus and pieces of raw carrot. You can decorate the dish with a sauce made from tahini, a few drops of lemon juice, water and a pinch of salt.
