Cut the cheese into thin wedges Cut the shiitake mushrooms into thin strips. On a baking tray, spread the pizza base with tomato sauce, sprinkle with the oregano, place the shiitake mushrooms and drizzle with the olive oil. Arrange the pieces of cheese on top. Cook in a preheated oven at 250ºC until the base is golden brown, about 5-6 minutes. Finish by sprinkling on chopped chives.
Notes: The 100 g of fresh shiitake mushrooms can be substituted with 35 g of dry shiitake. They should be soaked in hot water before use.
