Heat up the milk Mix the egg yolks, sugar and cornflour in a bowl. Chop the cheese and pour hot milk over it. Blend and mix little by little with the egg yolks, sugar and cornflour. Place the mixture in a saucepan and cook over a low heat, stirring with a whisk until it sets. While still hot, pour the mixture into the containers and cool. Before serving, sprinkle with sugar and burn with a blowtorch or hot iron.
Notes
If you do not have a blowtorch, you can make a caramel and drizzle it with a spoon over the crème brûlées to make fine threads.
