Mix the sauce ingredients. Cut the tomatoes. Cut the mozzarella into eighths and set aside in a colander. Spread the sauce over the pizza, place the tomato slices on top and bake at 250ºC until golden brown. Remove the pizza from the oven, add the pieces of mozzarella and bake for 30 seconds. Finish by sprinkling the pizza with the basil and Maldon salt and drizzling with the extra-virgin olive oil.
